Slow Cooker Chipotle Pork with Pineapple Coleslaw
Smoky, spicy pork meets a sweet, tangy pineapple coleslaw and man is it good! I love the contrasting flavors in this dish that work just perfectly together.
The pineapple coleslaw takes no time to whip together (especially if you can find a pre-shredded coleslaw package) and the pork is made in the slow cooker so this meal practically makes itself π
This has been a staple in our house this summer since it’s such an easy, wholesome meal that everyone enjoys. I hope you love it as much as we do!
Oh and if you are looking for an amazing crockpot, ThisΒ is the one I have and love oh-so much (me and my crockpot – we’re like BFF’s).
- pork roast, about 4 lbs
- 1 tablespoon black pepper
- 1 teaspoon sea salt
- 1 teaspoon chipotle chile powder (more if you like it spicy!)
- ΒΌ cup balsamic vinegar
- 2 cups chicken or beef stock
- 1 teaspoon all natural liquid smoke
- Optional serving toppings: avocado slices, freshly torn cilantro, bbq sauce
- For the pineapple coleslaw:
- 4 cups coleslaw (approximately Β½ head green cabbage, Β½ head red cabbage, 2 carrots β all shredded)
- Β½ cup mayonnaise
- 1 Β½ tablespoon apple cider vinegar
- 2 cups fresh pineapple
- sea salt and pepper, to taste
- Combine the spices for the pork in a small bowl.
- Rub the entire pork with the spices.
- Place in the slow cooker.
- Add in the stock, balsamic, and liquid smoke.
- Give it a stir, cover the crockpot and cook on low for 8 hours.
- When it's finished cooking, take the pork out of the slow cooker and shred it. Feel free to add in ΒΌ β Β½ cup of some of the slow cooker juice if you like a juicier shredded pork.
- Serve with the pineapple coleslaw and any optional toppings. Enjoy!
- For the pineapple coleslaw:
- Combine all ingredients in a bowl and stir.
Hi, this looks really good except I don’t eat pork. Do you think I could do this with chicken thighs and breasts or would beef go better with those spices you used and with the coleslaw?

I made this tonight, using chicken thighs. Now normally I don’t really like meat in the crockpot, but this was really good and tender, but the KILLER and a MUST HAVE was the pineapple coleslaw! It went with the meat so well, and the BBQ sauce (here on the site) was an amazing addition to the recipe as well!

So delicious! And very forgiving about the amount of extra time it was in the crock pot to accommodate my work/commute. My in-laws were visiting from out of state, and I impressed them with my cooking skills. Thanks for the recipe – this will definitely be an oft-enjoyed one.
I am somewhat new to your blog, and so far the recipes have been winners! This one in particular was amazing, and so easy. The only changes I made were to brown the pork roast before putting it in the crockpot, which I usually do, and I added a small amount of cumin as well. Pineapple slaw was the perfect side! Even taking the time to make my own mayo for the coleslaw, this was a quick and easy meal. The leftovers will be a great lunch!

Hi Beth, sometimes I feel like I’m the only one in the world who doesn’t like or use an Instant Pot! I had one for about a year, but never liked it and got rid of it. I did use this recipe in the Instant Pot and it worked fantastically, but it’s been so long ago that I don’t remember how long I cooked it!
