And is it me or are cutesy little cupcake shops popping up everywhere nowadays?! Those beautifully decorated cupcakes in fun flavors galore taunting me everytime I stroll past. But those prices – yikes!

Do you think that whipped egg whites would be a good replacement for coconut cream?
Hi Angela!! 🙂 I think it depends on the recipe, but I think for a lot of applications, yes. Was there a specific recipe you were looking at?
Nothing specific. I went to my nutritionist/kinesiologist yesterday, and she said I can try to re-introduce coconut into my diet. All of the yummy looking toppings and fillings are made with coconut cream. I just wanted to know if you thought whipped egg whites would work as a good replacement in case I don’t do well with the coconut. 🙂 It nice to finally be able to add another food back into my diet.
