I’ve been holding out on you all with this cookie dough snack balls recipe. Sorry guys! I’ve been making these babies every week since February.

 

And 3 months later, they are still one of my very favorite things. Which is kind of a big deal because I am usually obsessed with a new favorite thing every other week 😉

 

I make a batch of these cookie dough snack balls at the beginning of the week and then through the whole week, I have a nourishing, quick, grab and go snack ready whenever I want one. I love ’em and everybody else does, too!

This cookie dough snack balls recipe is actually a short cut to one of my previous and very loved recipes (THIS one). I am always looking for short cuts in the kitchen. Don’t get me wrong – I love to cook and bake, but I also love to do a million other things (especially spending time outside!). Spending hours in the kitchen is just not for me.

 

So I found a way to make that previous recipe of mine even easier – woo! And what I came up with is this recipe I’m giving you today. It’s super simple.

 

And if you want to make it even more simple (because I totally do this when I don’t have the patience to roll into individual balls), just spread the mixture out in a 8×8-inch, parchment lined baking pan. 5 minutes and done! Refrigerate until hardened, cut into squares and eat 🙂

Cookie Dough Snack Balls Recipe (Paleo, Vegan)

Cookie Dough Snack Balls from Primally Inspired
Ingredients
  • 1-1/2 cups unsweetened coconut flakes (find HERE)
  • ½ cup nut butter of choice or peanut butter. For nut allergies, use sunbutter (find HERE)
  • ½ cup coconut oil (find HERE), melted or softened
  • 1 teaspoon pure vanilla extract
  • ⅔ cup mini chocolate chips (I use THESE because they are dairy free and soy free)
Instructions
  1. Combine all the ingredients, except mini chocolate chips into a bowl and stir until well incorporated.
  2. Stir in mini chocolate chips.
  3. Roll out into bite size balls (about 1 inch).
  4. Refrigerate or freeze until hardened (only takes a few minutes!)
  5. Eat and enjoy!
Notes
Keep any leftovers in the fridge or freezer.

*To make this even more simple if you don't feel like rolling into balls, just spread the mixture into an 8x8-inch, parchment lined baking pan. Refrigerate until hardened and cut into squares.

    am i nuts for making this as soon as you posted it?? haha the truth is that i was at the mall today and so hungry and i wished i had an easy food to take with me that fits in my purse.

    i had everything but chocolate chips (embarrassing, i know) so i chopped up a banana and put that in for the sweetness. i guess they are banana cookie balls. i tasted the batter and it’s amazing!! can’t wait to have one straight from the fridge. they weren’t messy at all or sticky like a lot of the recipes with honey. i’m sure it will remind me of eating those rolls of cookie dough with the fun shapes on them!

    I don’t see honey in the recipe, but mine doesn’t form. It is to soft and just falls off everywhere. I don’t eat coconut and so used oats. But it wouldn’t form at all for me. I placed it in the fridge to harden the coconut oil so I could try to roll it and then it was just a hard block in my bowl. Do you have any suggestions?

      I had the same problem you had, mine were too oily to form into balls so I put it in the fridge to harden up, then it was too hard. I let it sit out to soften a bit and then was able to roll them into balls and put them back into the fridge to harden. I used cashew butter and dried blueberries instead of chocolate chips. These balls are great snacks but they’re too oily for me, so I’m going to play around with the amount of coconut oil (start with 2 tablespoons maybe) or just eliminate it completely. I think walnut butter would be great too!

    Thanks for a great recipe — I love the small ingredients list! I took some of these to a get-together with (non-paleo) friends and they went over really well. I used homemade cashew butter. 🙂

    Just made these and they are wonderful. I made them with my vegan son in mind, but we all love them and they are very satisfying. We started with peanut butter, but I’m going to try almond butter next. Also lots of possibilities for add ins!

    These are awesome. I made them with raisins instead of chocolate chips and they were great. Ours need to live in the freezer though

    I made these and had to add a little more peanut butter. My kids loved them. I bought coconut oil a few months ago and I know the taste is something you have to get used to. If I start using it more I wouldn’t need the extra peanut butter. Oatmeal would also taste good in it. Thanks for the recipe!

    So making these this weekend to take with us on a trip to the mountains to XC ski and snowshoe. Like the PERFECT snack to come back to after a grueling workout (which for me right now would be to put snowshoes on, much less GO anywhere, haha!). Can’t wait to try them!

    I made these tonight and they are amazing! I did add ground flax seed to the mix just because. I love them! My oldest wasn’t too found of the coconut flavor but we’ve just started paleo-ish diet this week. I think I’ll try the nuts you mentioned for him! Thanks for posting!

    I just made these and they smell soooo good. Mine is very, very oily. it 1/2 cup of oil? Why is mine so oily?

      Hi Elizabeth! They will be really oily until they are placed in the fridge to harden. The oil will harden in the fridge & then they should be firm little balls (that sounded naughty lol). If you’re finding that they are still too oily after being in the fridge, you can lessen the amount of coconut oil next time.

    These are soo yummy! I used cacao nibs and it was a perfect combination to offset a little of the sweetness from the coconut oil. I will be trying some of the other combinations mentioned in the comments.

    How would you go about adding protein powder? I think this could be a good snack for competitions, but would like some protein.

      Christine, that’s a really good idea! I think you’ll just need to play around with it. I’d start by adding 2 scoops (or more if you want) of protein powder. You may be able to get away with adding 2 scoops without changing anything. If the mixture is too dry, add some more nut butter.

    I really dislike peanut butter, and haven’t tried any other “nut butters” before. Do you think it’s possible to use regular butter like “Lurpak”? Thanks!

      Hmmm, maybe Natasha. I think it would be a similar texture and would work for the recipe, but I’m not sure how it would taste. Maybe awesome! Maybe not?! 🙂 If it sounds good to you, I say go for it! You could always halve or quarter the recipe to try it.
