Orange “Creamsicle” Panna Cotta (Paleo, Dairy Free)
Boy is it cold here! The last few days we’ve had negative wind chill temps here in south central Pennsylvania. Bur!
There’s a blanket of snow covering the ground and we also had crystal clear skies and a full moon this week. Once the sun goes down, it looks like a million tiny diamonds sparkling all over the snow as the moon shines it’s light down below. I just love all those sparkles – it’s like nature’s glitter and it’s absolutely beautiful 🙂
Even though I enjoy the beauty and the fun of the snow (I love sledding!), I really dislike the cold temperatures. Anyone else with me on that?
So this week, I’ve been especially craving a taste of summer. And lucky for me, a friend of ours brought us a big basket of freshly picked oranges from Florida yesterday! Those Florida oranges are so good. I’ve been savoring each juicy, sweet bite as I think about all the possibilities of new recipes I want to create with them.
So last night, after an especially cold day, I whipped up this simple orange panna cotta that tastes just like a creamsicle. It sure hit the spot and reminded me of sweet summertime. I couldn’t get over how delicious it was and also how incredibly simple it was to make. I couldn’t wait to share the recipe with you!
This orange creamsicle panna cotta is a very healthy dessert option, made with nourishing ingredients like weight loss friendly and metabolism boosting coconut milk and also gut healing gelatin. It’s also a great choice to serve to company. It looks super fancy and elegant, but it’s so simple to make (5 minutes of prep!) with only a few ingredients.
And because orange and dark chocolate is one of my favorite flavor combinations, I couldn’t resist topping each serving with a few shavings of a dark chocolate bar and a few extra segments of those yummy Florida oranges. If you love dark chocolate and orange as much as I do, I would totally recommend doing that, too – it’s divine!
Orange Creamsicle Panna Cotta (Paleo, Dairy Free) Recipe:
- 1 14-ounce can full fat coconut milk (I use THIS)
- Zest and Juice from 1 orange
- 2-3 tablespoons honey or sweetener of choice (I use THIS)
- 2 teaspoons pure vanilla extract
- 1 tablespoon gelatin (I use THIS - it's sourced from grass-fed cows)
- Optional toppings - another orange torn into segments, shaved dark chocolate bar or chocolate chips
- Place all the ingredients together in a pot over medium heat. Whisk occasionally until bubbles start to appear on the sides and the gelatin is completely dissolved (do not bring to a boil - important). This should take about 5 minutes.
- Remove the pot from heat and pour into small serving dishes or ramekins. I used 4 small custard cups like THIS.
- Refrigerate for at least 2 hours or until completely set.
- Before serving, top with any optional additional toppings of choice. Enjoy!
Just used up the last of my Great Lakes gelatin. Can’t wait to try this out when I get some more. The timing is perfect…I decided to try cutting out dairy completely for a month and see if I notice any changes.
I’m hoping for your sake that you can still do dairy! I can’t and still get so bummed about it. It was the hardest thing for me to give up – so much harder than grains. But the way I feel without it is SO worth it (at least that’s what I keep telling myself when I see all my friends eating ice cream lol). I had headaches every single day throughout my childhood and adulthood – it was a dairy sensitivity and I had no idea until I gave up dairy for 30 days about a year or two ago! I can still do sheep and goat’s milk dairy, which has been a blessing, though! Keep me posted what you find out after your 30 days! And I hope you enjoy this recipe, too 🙂
