Bacon Avocado Cups Recipe
These avocado cups filled with bacon are sinfully delicious. Almost too delicious. Like so delicious that I could eat these every single day for the rest of my life and be blissfully happy.
I love serving these as a fun appetizer or side dish because everyone raves over them. I’ve served these to people who don’t even like avocado and they fall in love with them and ask for the recipe. That’s how good these babies are.
I’ve also been known to eat these avocado cups a few times a week for my lunches. All the good fats from the avocado keep me fueled for hours at a time and my hair and skin reap the benefits. Sometimes when I’m in a hurry, I leave out the bacon (crazy, I know) and just eat the avocado covered with the balsamic glaze. Dee-lish.
You’ve got to try them and then tell me that I’m not crazy and that you think they are utterly delicious and that you could eat them everyday, too.
Bacon Avocado Cups with Balsamic Glaze
Serves 2-4, recipe can easily be cut in half, doubled, etc.
2 avocados
4 slices of bacon, cooked
fresh lemon slice
3 T butter
1 T balsamic vinegar
1 tsp minced garlic
DIRECTIONS:
Cut your avocados in half lengthwise and remove the pits. Rub the insides of the avocado with a few drops of lemon juice from a fresh lemon slice (If you are eating these right away, you can leave out the whole lemon part – the lemon just helps keep the avocado from turning brown). Crumble the bacon and stuff it into the avocado half where the pit was – use one piece of bacon per avocado half.
Over low heat, melt the butter, balsamic and garlic. Stir constantly for about a minute or two until the mixture is boiling. As soon as it boils, remove from heat and drizzle all over the avocado halves. Enjoy!
Oh my – these sound delicious! I was bummed out when I found out that yet another child of mine doesn’t like avocados. I can’t get anyone to eat them! Then, I found out that if I sprinkle balsamic vinegar and garlic salt on them, the baby will devour nearly a whole avocado by himself. He’s still a bit young for bacon but this is a treat we’ll both be enjoying soon. Thanks for the recipe.

That was….DELICIOUS. I didn’t have any bacon (seriously, who runs out of bacon??) but I did have some ham, which was thin sliced and which I diced up further, then sauteed in some ghee. Built the rest of the recipe as you instructed and…tasty!
I suspect this mixture would also compliment something like acorn squash. The slightly sweet taste of the squash would go well with the garlic/balsamic “bite”. What do you think? I’m trying it later on my husband as I have a half a squash left I need to serve today.

If you want to make these even healthier, substitute prosciutto di parma for bacon. Prosciutto is usually a bit leaner than bacon and only uses salt as a preservative (therefore, no nitrates or nitrites or other nasty chemicals). You can crisp it in a frying pan like bacon, but it will need much less time and may stick to the pan if you let it go too long (as there’s not as much fat inside it).

I made this yesterday and added a poached egg under the crumbled bacon…. Yummm!!!! Creamy avocado, gooey egg yolk, crispy bacon & the balsamic glaze – I think I’ll be doing the same thing for lunch today!! 🙂

For an appetizer do you think this would be good. Cube the avocado and put it into small lettuce cups, add bacon and balsamic glaze. Or perhaps use those tostido scoops for a bite size app?

My husband can’t eat balsamic vinegar. Do you think there would be a good substitute for it?
Hmmm, that’s a tough one. Can he eat any other vinegars? Good substitutes for balsamic are red wine vinegar with a pinch of honey.
But, I am thinking some soy sauce would probably be a really delicious substitute. I always go for the wheat free soy sauce (tamari) or coconut aminos, if you can’t or don’t eat wheat.
Also, I think the garlic butter and just leave the balsamic out would probably be really tasty, too.
Totally just made these for an afternoon snack in this heat wave we’re having in QLD – delicious! I want to make another round now, but I’ll be good and wait until tomorrow haha. Awesome idea!

What would you recommend of butter if you are trying to avoid dairy? Ghee, lard, coconut oil? Would those work? Still learning the ropes of this Paleo thing…

So i tried these today for lunch. Super yummy! I am going to try your suggestion to another reviewer and use ghee, though, because I don’t like butter, and the smell while cooking the glaze just about darn near killed me! I’ve never tried (or heard of) ghee, so this will really be a new thing for me.
I am going to make this for the holiday on Monday because we are entertaining and whole bunch of friends who happen to be paleo.
(And I know what you’re thinking….who doesn’t like butter? I don’t even know why, but it just adds to my weirdness, and I’m okay with that!)

These were so tasty! However, I couldn’t get the balsamic and butter to emulsify, so it was pretty separated. It tasted good, but some bites were all butter w no balsamic or vice-versa.
I love your recipes, but it would be GREAT if you could add a “PRINT” option to your page. It would certainly make it a lot easier than copying and pasting. Just a thought….

If I am taking these to work with me, what would you suggest I do with the glaze? Pour it into a separate container and then rewarm a but and pour, or just pour on immediately? Thanks! I can’t wait to try these
I think I’d pour it into a separate container and rewarm it. If it’s refrigerated it will harden a bit so that’s why I’d keep it separate. I always have a bottle of this glaze with me at all times (can you say obsessed?!). I pour it on everything 🙂

What would you recommend to sub for butter for those with dairy insensitivity?
Hi Marnie, Some people with dairy sensitivity can do ghee and that would be the best substitute. But if ghee is also a no, avocado oil would be the best substitute.
