Looking for a delicious and incredibly healthy one pan meal…that’s ready in 20 minutes? You’ve come to the right place!  This Butternut Squash Chicken Skillet recipe has all the flavors and aromas of fall. And it’s absolutely delicious! We can’t get enough of it!

 My local farmers market even sells already cubed butternut squash, which makes this recipe even easier – woohoo! And feel free to use any type of chicken – chicken breasts, thighs, etc. 

 

We like to serve this Butternut Squash Chicken Skillet as is or sometimes I’ll have a salad on the side if we are feeling exceptionally hungry. I think you’re really going to love this easy one pan meal that’s perfect for Fall! Enjoy 🙂

Butternut Squash Chicken Skillet - one pan meal! Whole30, Paleo, Gluten Free
Ingredients
  • 4 cups butternut squash, cubed
  • 4 cups boneless chicken, cubed
  • 2 cloves garlic, minced
  • 1 cup red onion, diced
  • 1½ teaspoons cinnamon
  • 1½ teaspoons nutmeg
  • ¼ cup maple syrup or apple cider (use apple cider for Whole30)
  • ½ cup chicken broth
  • sea salt and pepper, to taste
  • 1 tablespoon oil of choice, for cooking (I use THIS)
  • optional: top with a sprinkle of freshly chopped herbs of choice: I like sage, thyme or rosemary! But use what you love 🙂
Instructions
  1. Combine all ingredients except the oil into a bowl and mix well.
  2. Next, heat the oil in a skillet over medium heat.
  3. Once oil is heated, add all the contents of the bowl into the skillet and cook over medium heat for 20 minutes or until chicken is cooked through, stirring occasionally. Top with a sprinkle of freshly chopped herbs, if you desire. Enjoy!

    Oh wow, Kelly, this recipe sounds too good to be true…tons of flavor with minimal mess and ingredients. I am definitely trying this with the precut squash…cutting a butternut squash totally intimidates me!

      I’ve done almost this same recipe (ingredient wise) in crock pot, I call it butternut chicken stew… It’s definitely softer/stewy in crock pot rather than the nice carmalized, individual pieces like in this one, but the flavors are great and is easy. 4 hours on high or 6-8 on low, if I recall correctly.

    Hi there! I am making this in my Instant Pot using frozen chicken and frozen butternut squash (dinner desperation, can’t do takeout or go to the store tonight). I used 1/2 cup each Apple Cider and broth (wanted to be sure it came to pressure). 20 minutes on high pressure. Fingers crossed!

    Hubby made this, it was really good! I think next time we’ll adjust a bit & add a little spice to it, maybe some Cajun or cayenne pepper, or smoked paprika.

    Made this tonight & the flavors are amazing but instead of getting carmelized, mine had a lot of liquid. Not sure what I did wrong, followed the recipe exactly. I’ll have to try again!

    Delicious dish! The recipe says diced onion but How do you see in the picture it sliced red onion. I prefer the sliced red onion. I did not have chicken broth but I had a box of butternut squash soup but I added it was delicious! Thanks for the recipe
