Baked Grapefruit Crisp

  Baked Grapefruit Crisp from Primally Inspired

I feel like Mr. Grapefruit has gotten an undeserved bad reputation over the years:

 “He’s way too tart.”

He’s not sweet enough.”

Only old people like him.”

I’d rather have a breakfast date with Mr. Orange.”

 

Well give this poor guy another chance, please! I’ll prove to you that Mr. Grapefruit is a superstar and you’ll be singing his praises after your next date.

 

All he needs is a little time in the oven to really bring out his sweetness and juicy goodness. Then, I’ll dress him up to look like a major stud in an eye catching golden brown crisp full of heart healthy coconut and nuts. He’ll even smell delightfully delicious with a slight hint of cinnamon.

 

 

Plus Mr. Grapefruit has a lot to offer! He’s a wonderful immune booster, full of Vitamin C. Oh and did I mention he’s also loaded…….with fiber and potassium. He brings to the table a hefty dose of lycopene, too.

 

See, he’s sounding better and better all the time, right?

 

I told you so.

Baked Grapefruit Crisp from Primally Inspired

2 servings

Ingredients:

1 grapefruit

2 Tablepsoons sliced almonds

2 Tablespoons chopped walnuts

3 Tablespoons unsweetened coconut flakes

2 Tablespoons pure raw honey (or another liquid sweetener of choice)

pinch of cinnamon

pinch of salt

 

DIRECTIONS:

Preheat oven to 350.

Cut your grapefruit in half. You may need to cut a slight bit off the bottoms of both grapefruit so they sit nice and upright. With a knife, remove the white membrane in the centers of the grapefruit and remove any seeds that you see. Run your knife around the outer edge of the grapefruit so the segments easily come out when it’s ready to eat.

Now mix up the rest of your ingredients in small bowl. Put equal amounts of the crisp on top of the grapefruit. Place the grapefruit on a cookie sheet and bake for 10 minutes.

After the 10 minutes is up, turn on your broiler and broil for about 2 – 3 minutes until top is golden brown and crisp. Watch carefully while it’s under the broiler so it doesn’t burn. You may also need to rotate the cookie sheet a few times when it’s under the broiler. Enjoy!

    I saw this recipe on FB and it truly intrigued me. I made this for breakfast this morning. OMG IT IS DELICIOUS! I didn’t have any walnuts in the house so I used rolled oats in its place (kept everything else as is). I will be making this many more times! I’ve also made 1 batch each of the lemon bread and banana bread this evening (haven’t tried it out yet so will comment on that later). I’m so happy to have found this site because there are so many other recipes I can’t wait to try! Thanks for sharing your masterpieces.

    I flipping LOVE grapefruit but never buy them – because the Mr won’t eat them. But, darn it, I’m going to go buy and bake me some grapefruit soon: great idea! 🙂
