Confession (actually 2 confessions): I have been making this easy, healthy fudge recipe entirely too much during the last few months. And I make it with peanut butter.

Yes, I know….peanut butter is not paleo. But it’s one of those foods that I digest well and I love it. So I eat it. If you don’t do peanut butter or are allergic, this recipe is super tasty with any nut or seed butter. I’ve made this fudge with almond butter, cashew butter and sunflower seed butter and they’ve all been a huge hit. But, I still love my peanut butter πŸ˜‰

Most fudge recipes call for a ton of sugar and I promise that this easy, healthy fudge recipe tastes just as good with a very minimal amount of natural sweetener.

And in case you haven’t heard, coconut butter is not only incredibly tasty, but it’s a great food to incorporate in your diet. The fats in coconut butter are medium chain fatty acids that help boost metabolism and can actually help you lose weight (learn more about that HERE).

This recipe couldn’t be more simple to make (less than 5 ingredients!) and everyone I’ve served it to has raved over it and asked for the recipe. I hope you enjoy it as much as we do!

Ingredients
Instructions
  1. Mix softened coconut butter, nut butter, vanilla and honey together in a bowl until well combined.
  2. Pour and spread into a parchment lined 8x8 baking pan.
  3. Pour the chocolate chips all over the top of the fudge. I gently press the chocolate chips down into the fudge with my hands.
  4. Refrigerate or freeze until hardened.
  5. Cut into squares and enjoy!
Notes
Keep any leftovers in the fridge or freezer.

    I still eat peanut butter on occasion (minimally processed and organic) and I do fine with it. I also do some dairy as well. Speaking of which, I don’t have coconut butter on hand, can I use regular butter or oil?

      I’m wondering the same thing. I’d prefer to use grass fed butter if possible.

      Coconut butter cannot be relaxed with coconut oil or butter. Coconut butter has the meat of the coconut finely ground. You can make your own by blending coconut until it forms a paste.

    Thank you for this recipe! I used 50/50 tahini and PB, which worked out well. I didn’t have any chocolate chips, so made some out of your dark chocolate recipe (which is a favorite here). I put the fudge in my muffin tin, and it turned out really well! And delicious.

    I don’t suppose one could use coconut oil instead of coconut butter? Coconut products except for pure coconut oil – coconut flakes, coconut butter, coconut flour, etc. – don’t agree with my digestion at all and make me itchy. πŸ™

      Mari, you could certainly try! I make a chocolate fudge that has a large amount of coconut oil in it (rather than coconut butter) and it’s amazing. You may need to play around with the sweetener because it many need a bit more sweetener with just using coconut oil. Coconut butter has a natural sweetness to it that coconut oil does not have. Let me know if you try it!

    So I didn’t have coconut butter but I tried this using coconut oil instead like a few people mentioned here. Tet turned out delicious! I had to use a few different steps first,, I put all te ingredients in a bowl (using 3 tablespoons of honey and more like a heaping 1/2 c of peanut butter) I used the doubler boiler method and melted all the ingredients till it was smooth and liquid. Since coconut oil is chunky when hard I couldn’t just mix it as it was. I then just followed the rest of the recipe and they turned out so good! A light coconut flavor and a melt in your mouth feel. I will be making these again! Thanks for the recipe!
