A Halloween Treat: Dark Chocolate Almond Butter Cups
These little cups don’t have any added sugar, but you would never know it. They are so, so good, one of our favorite treats and you don’t even have to feel guilty about eating them! I included a regular version (Zach’s favorite) and a pumpkin version (my favorite). This is a much better and healthier option than all the sugar loaded and artificially flavored Halloween candy.
Dark Chocolate Almond Butter Cups Recipe
Makes 6 individual cups
Ingredients:
¼ cup almond butter
2 T coconut oil
1 tsp vanilla
1 cup dark chocolate chips or pieces (60-70% cacao tastes the best)
1 T additional coconut oil
DIRECTIONS:
Mix almond butter, coconut oil and vanilla together until well combined.
Melt chocolate chips and 1 T coconut oil over low heat in a double boiler until melted and smooth.
Line a cupcake pan with 6 cupcake liners. Pour about a tablespoon of chocolate in the bottom of each liner. Swirl the cupcake pan around until the chocolate comes up around the liners about a 1/2 inch. Freeze for a few minutes until chocolate is all the way hardened. Take out of freezer and put a little less than a tablespoon of almond butter mixture on top of the hardened chocolate. Put back in freezer for about 5 minutes. Take out of freezer and cover the almond butter mixture with about a tablespoon more of chocolate or until almond butter mixture is completely covered with the chocolate. Refrigerate or freeze until chocolate is hardened. Keep in the fridge or freezer. Enjoy!
PUMPKIN SPICE VERSION:
Makes 6 individual cups
Ingredients:
2 T pumpkin (roasted or in a can)
2 T almond butter
½ tsp vanilla
1 tsp pumpkin spice
1 cup dark chocolate chips or pieces
1 T additional coconut oil
DIRECTIONS:
Combine pumpkin, almond butter, vanilla, and pumpkin spice together and mix until well combined. Follow directions above.
I have made something similar to this before, but this looks much easier and much healthier! Looks yummy, I think I’ll try to make them tomorrow!

Yum I made these on Halloween and am making them again right now. They turned out really good and were really cute. We all like the regular ones the best but the pumpkin one was fun to make for the holidays.

Great recipe! I made mine with organic dark roasted peanut butter and a higher cacao (about 80%) and it was the perfect treat! Thanks so much for posting this. I’ve been gluten and sugar free for a few months and this really satisfied my sweet tooth tonight. Not to mention, it was super easy! Only bad part, it makes for some messy fingers as the chocolate starts to melt, mmmmm!!!!

I didn’t think these would be so easy to make, but they are! I’m gonna keep some at work to fulfill those stressful moments when the “gotta have chocolate” desperation sets in. No need to reach for other people’s candy dishes when I’ll have the “good stuff”. Oh, and I had an extra tablespoon or so of the chocolate, so I rolled some whole almonds around in it, and made two dark chocolate almond clusters. Yummy!
