Easy Lemon Fruit Dip (Dairy Free)
Fruit Skewers are so fun! Let’s face it – everything tastes better on a stick.
Speaking of, my local fair is this week and I saw fried oreo’s on a stick. Let me say that again:
fried oreo’s….on a stick.
I’m so serious. Only in America would someone think to make something completely unhealthy even unhealthier. I should have taken a pic so you know that I’m not making this stuff up, but I think I was so shocked that grabbing my camera was the last thing on my mind. Oh and in case you’re wondering, I passed on my opportunity to eat a fried oreo on a stick.
Anyway, no fruit skewer would be complete without a dip. This is my go to fruit dip and I take a tray of these fruit skewers and dip to many summertime parties. Lemon is the perfect compliment to all types of fruit and both kids and adults really love it.
For my 4th of July celebrations this year, I’m making individual fruit dip cups for everyone and putting raspberry and blueberry fruit skewers in each cup. It’s so cute, festive, and really yummy, too 🙂
- 1 can full fat coconut milk, refrigerated overnight
- 1 lemon, zested and juiced
- 2 tablespoons pure raw honey (or sweetener of choice)
- 1 tsp pure vanilla extract
- Scoop just the cream that has risen to the top of your refrigerated coconut milk
can and place in a bowl or stand mixer. You can use the remaining liquid for a
smoothie or discard it, but we won't need it for this recipe. - Whip the coconut cream with a hand or stand mixer until peaks form (just like
regular whipped cream) - After peaks form, add in the remaining ingredients and mix until well incorporated.
- Keep refrigerated until ready to serve.
